Plum chutney will add some serious flavour to a sandwich and bring a whole new level of deliciousness to your favourite cheeses and cold cuts.
Pair it with your Christmas turkey or ham – the sweetness of the plums and the heat of the spices will work wonders.
Ingredients
1,5 pounds plums
12 ounces onion
3/4cup raisins
1 cup light muscovado sugar
0,5 teaspoon crushed dried chile
1 teaspoon salt
2 teaspoon yellow mustard seeds
2/3 cup cider vinegar
2/3 cup malt vinegar
1 cinnamon stick
Half the plums and discard the pits.
Peel and coarsely chop the onions.
Put the fruit and onions into a large stainless steel or enamelled pan with the raisins, sugar, chile, salt, mustard seeds, vinegars and cinnamon stick.
Bring to a boil, turn down the heat and leave to simmer for an hour, giving the occasional stir to reduce the risk of the chutney sticking.
Spoon into sterilised jars and seal.
Unopened homemade chutney will last up to a year when stored in a cool dry place. Once opened, it’ll last 2 months when stored in the fridge.
